Rx Recipes: Banana Bread
A quick-and-easy recipe for a timeless favorite

Our Rx Recipes series explores recipes provided by faculty, staff, students, and alumni of the UNC Eshelman School of Pharmacy. From the Director of Experiential Programs, Christy Holland, PharmD ’01, comes this “no-fail, works every time” banana bread.
Ingredients
1 stick of butter, softened or melted
1 cup sugar
2 eggs
3 ripe bananas, mashed
1 1/2 cups all purpose flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 tsp vanilla extract
Directions:
- Preheat oven to 350 degrees Fahrenheit
- Prep a loaf pan with butter or nonstick spray
- Stir together butter and sugar
- Add eggs, mashed bananas, and vanilla. Stir well
- Pour batter and spread evenly in loaf pan
- Bake for 45-50 minutes, until browned and the middle is set
Christy Holland, PharmD ’01, brings us this recipe. She works as the Director of Experiential Programs at the School, where she and the team oversee 2,400 student months of experiential learning annually, coordinating with 600 students, 1,500 preceptors, and 450 clinical sites.
Christy’s knowledge and involvement with experiential programs runs deep. After graduating from UNC, she completed her residency at The Medical Center of Central Georgia where she then went on to serve as the residency co-coordinator and student coordinator. In 2008, she moved to Arkansas and served as pharmacy practice faculty at Harding University. In 2011, she took a position as a clinical pharmacist at Baptist Health Medical Center in North Little Rock where she started a PGY1 hospital-based residency program which she saw through accreditation, and expanded in 2012 to a second site.
In 2013, Christy returned to North Carolina to work in community-based outpatient care with Realo Drugs. She partnered with the School to begin a community-based residency program there in 2014, going on to serve as the Realo Drug residency site coordinator. She also coordinated student rotations for Realo preceptors.
Christy officially joined the UNC Eshelman School of Pharmacy staff in November, 2020. She lives in Clayton with her husband, Chris; children, Carolina and Caleb; and dogs, Minnie and Daisy. An avid runner, she has completed the Walt Disney World Marathon twice – in 2021 and 2022.
