Rx Recipes: Beef Tips with Gravy

Beef Tips with Gravy Recipe:
What You’ll Need
A decent size crock pot
Large Skillet
Small bowl and whisk
Ingredients
1-2 tablespoons olive oil2-3 pounds stew meat or beef tips
Salt and pepper to taste
3 cups beef broth (or 1 box)
1 package dry onion soup mix
1 package of Au Jus Gravy mix
1 tablespoon Worcestershire sauce
2-3 cloves garlic, minced
3 tablespoons cornstarch
Instructions

Heat olive oil in a large skillet over medium-high heat, add in garlic.

Season stew meat with salt and pepper, then add to skillet (working in batches if necessary), and sauté until browned. Once browned, add stew meat to slow cooker.

In a medium bowl, whisk together beef broth, onion soup mix, au jus gravy mix, Worcestershire sauce, and cornstarch. Pour over beef.

Cover and cook on low for 5-6 hours, or until beef is tender. Serve with mashed potatoes, rice or noodles.

Victoria and her family found this recipe during the pandemic, and it quickly became a family favorite after adding Au Jus and garlic to really make it their own. The simplicity of this recipe allows Victoria and her family to return home to a delicious meal that is ready to eat, since the ingredients can be thrown into a crock pot and left to cook. This means that she can enjoy quality family time over a delicious meal once she returns home from work, without having to worry about preparing dinner for that night. Not to mention, this recipe brings back happy memories from her childhood, as it reminds her of a dish her mother used to make. Victoria can now continue to foster these memories and create new ones with her own family.
Victoria has worked with the School for five years now and has been a staple in the community. In her role, she collaborates with various teams to drive initiatives, such as the launch of the New Employees’ Canvas Onboarding course, which was developed in coordination with the Onboarding/Offboarding committee last year. One of her favorite projects, though, is overseeing the Eshelman Employee Excellence Kudos recognition program, which celebrates outstanding contributions and achievements within the School.
When she is not at work, Victoria, prioritizes her time with family. Together, they play board games, video games, and outdoor volleyball.
